Oilery - The room for the conservation of the oil:This was the room used for the storage and conservation of the oil. Situated adjacent to the oil mill, the oil was left here to "rest" immediately after it was extracted in order to encourage "dreg residue" to deposit.
These residual dregs were removed from the bottom during decanting at various occasions during the year. The containers were usually manufactured from terracotta and glazed on the inside with special varnishes to prevent the infiltration of the liquid into the porous material.
Other types of container were the "centenari" (used in the Veronese region and obtained from blocks of stone) and the more recent "cassoni" made from wood lined internally with watertight metal sheets.
