The water driven oil mills were found in the oil producing areas where waterways were available. This opportunity made life a lot easier during the pressing operations because it meant that animals weren't necessary inside the mill thus avoiding all the hygienic and technical problems these derived. Their presence on Lake Garda was concentrated mainly in the northern areas, rich in waterways that descend from the slopes of Monte Baldo.
The width of the wheel was proportionate to the flow of the water and, in many cases, with wheels of a large diameter excellent results were obtained even though the water flow rate was of a limited consistency.
The diameter of the toothed transmission was proportional to the speed that was required to be transmitted to the stone "grinder". In this oil mill the double pressing was carried out. After the first operation of olive crushing in the stone grinder, the paste obtained was placed in the special bags (olive mats) and it underwent its first pressing in a column of the press. Once this pressing was concluded, the residue, free of liquids, was dense and therefore was removed using the equipment comprising of vibrating paddles situated close to the grinder. The material obtained was once again placed in olive mats and pressed in another column of the press.
During the milling operations the stone was crushed together with the pulp in order to promote the drainage of the liquids under pressure.
