What can be seen in this room:
In this room there is machinery and equipment displayed from various eras dating back to the early 18th Century up until the end of the 19th Century.
The pieces displayed are all made from wood. In the central part of the room a large grinder can be seen that was used to carry out the first processing of the olives. It was driven by a horse or a donkey. The weight of the wheels in motion enabled the breaking up of the flesh and the stones in order to obtain a homogeneous paste ready for the next processing phase.
The following processing phase was carried out by the large lever press which can be admired in this room, it is one of the most important and significant pieces in the museum. The paste obtained was placed in special filtering panels (fiscoli) which, when placed under pressure, allowed the must to be filtered. The solid residue "sansa" was generally used for heating. Known already by the Egyptians, the lever press has represented the most widespread pressing system for centuries. Third and final phase: after the pressing phase using the lever press a must was obtained consisting of 2/3 water and 1/3 oil which was collected in a container and then poured in the "Sottino" medium sized terracotta container. Thanks to the differing specific weight, the oil, being lighter rose to the surface and was collected with a ladle.
In this room you can also admire an antique "Genoese" oil press. The mill, constructed using a typical black coloured slate stone, is tapered around the circumference to facilitate the breaking up of even the most resistant stones. The oil press was driven by a horse or a donkey, and a complex system of gears transmitted the movement to the wheel.
